How do you cope with this when it happens?

Some of the best advice I've heard is when it happens, don't guilt trip yourself and think "well I've blown my diet might as well eat all I can!"
I try my best to be aware that I've let it happen and not let it continue0 -
Make sure you are eating enough, that you are eating good food and food you like. Don't think you have to eat anything in particular or avoid anything in particular. Plan meals and eat them, and only buy what you intend to eat. Eat what you enjoy and enjoy what you eat. Structure your day get enough sleep, de-stress, exercise moderately, do something fun to distract yourself.
If you feel that you don't deserve to eat well or that you are a bad person for eating what you like, or think that you should be unhealthily thin, or things like that, seek professional help.1
