I have had my mfp calories set at 1400 (bmr) as i was happy with me weight.

I've recently joined the gym and on a day with no exercise other than reaching my 15,000 steps (fitbit charge hr) i burn around 2,000 calories.

My weight stays at 55kg (I havent reallt got an issue here) though I am constantly hungry..

So is it okay to up my calories so I don't feel so hungry now? I want to build some muscle (not a lot but slight muscle definition would be nice)... Just want to make sure I'm doing it right!

I dont know your height but 1400 could be ok if you were short (4ft 11, 5ft 1, etc) but since you burn 2000cal a day when you dont exercise and want build muscle you should increase your calories.

BMR is what you would burn if you stayed in bed all day. So yes, increase your calories. You can try changing your mfp settings to maintenance and see what it gives you.
