Coconut Lime Salad Dressing

Just thought I'd share, as tonight was one of my more creative moments and I came up with a delicious salad dressing...
3T extra virgin coconut oil
3T lime juice
1 clove minced garlic
1/4 cup cilantro
Of course the amounts are what I used - you'll have to see what tastes right to you. I used it on a bed of romaine, topped with a piece of salmon and some avocado. So delicious! :drinker:

I used about 2T (for 3c of lettuce), and it was about 100. All the calories really are in the oil...0 -
