I recently started taking CrossTread classes. It is a 30-minute, fast-paced class, where we alternate 1 - 2 minutes speed walking or jogging or running on the treadmill, and the other 1-2 minutes we are on the floor lifting light weights, or working with exercise bands, medicine balls, or bodyweight exercises, planks, etc.. What type of activity would be appropriate to log this under? Circuit training, Boot camp, something else?

I would do it under circuit training. It may overestimate your burn, so if you plan on eating exercise calories back - maybe only eat half back.

The problem with any option you choose is that you're hoping that your actual level of effort matches MFP's expected level of effort during the activity. It's always better to underestimate the calories burned in exercise than overestimate them. Circuit Training is probably a good fit but I'd definitely only plan to eat back a portion of those calories to be safe.
