Hi, so I've newly decided to follow a vegetarian lifestyle and looking for quick meal ideas, that I can make in a pinch. (My husband is a big meat eater) so it's a bit challenging. Also could use some vegetarian/vegan friends to maybe get support or share/swap recipes etc!
Thanks!!

This MFP group is good place, though not always active.
Has a lot of good recipes.

My husband is a meat eater too & it is challenging. The freezer is your friend. I make a lot of double recipes & freeze a lot. Soups, rice, veggie burgers freeze well. Otherwise I'd be cooking for hours. The happy herbivores group will be a help.

If I were a vegetarian, I'd make a lot of rice and beans dinners for both of us, and let him grill meat for him.

There are endless variations of rice and beans. Not all of these are vegetarian, but you could pick the meat out or cook it separately: http://www.wisebread.com/35-delicious-rice-and-bean-dishes

These are all vegetarian, and feature beans and lentils.

Make sure the carbs/legumes portion of your foods is enough for you (I mean, cook more of the carbs/legumes than before!) when you skip the meat that would be a part of your hubby's plate. There's also lots of veggie patties, and veggie protein sources like tofu, tempeh, seitan etc that you could experiment with!

I don't eat meat, but my BF does. We make a lot of meals where we can share the base meal, and he makes additional meat to add to his. For example, we'll make pasta with marinara, but then separately prepare meatballs for him, or we'll do some kind of fried rice where he'll make meat to add to his and I add extra egg to mine. During the summer, we use the grill a lot because it's easy for him to cook a few servings of meat for the next couple of days.
