What's your fav. homemade lunch meal?

I just need ideas of what I can make for kind of a cheap cost so I can implement them to my weekly meals.if you're able to add ingredients or a link of how to make that would be greatly appreciated.

    Rye bread sandwich with avocado tuna/salmon with Swiss cheese toasted sometimes I'm naughty and mayo it up

    Tuna with lots of chopped celery and onions, chopped pickles or relish and a tiny scoop of mayo. I add a little garlic salt.

    I pre-cook chicken breasts so they're easy to grab for lunch. This is a bed of romaine, spinach and kale, with a sliced chicken breast, half a sliced apple, some shredded cabbage and carrots and lightly drizzled with zesty lime dressing.

    I like a soup made with lentils & barley (1/4 cup each, dry) boiled in some homemade chicken stock with a handful of frozen spinach thrown in at the end, season to taste. Sometimes it's more than I can eat for a single meal, so I save half of it for the next day.

    I love tuna melts. Put tuna and a slice of cheese in a low calorie wrap, then grill it in a pan sprayed with a little Pam.

    I eat dinner leftovers for lunch often. I like soup as it is easy to reheat.

    Today's lunch: a can of tuna sprinkled with lemon juice, olives, pickles, extreme pickled beans, mini melba toasts with light herb and garlic cream cheese.

    I am a protein lover... so for me I usually have some sort of meat prepared ahead of time. In the spirng/summer I'll take an entire pack of boneless skinless chicken breasts, wrap them with a bacon slice, and smoke them in my smoker until they just hit done temps. I'll then immediately put each one in a zip lock bag, cool them quickly by dipping in ice, then freeze them. Each night during the week I'll pop one in the fridge to thaw and the next day at lunch I'll microwave re-heat it, slice it on some multi-grain bread for a yummy sandwich or eat it straight up with some BBQ sauce and some veggies. Recently I've smoked a pork loin (very high protein and low calorie), then finished it in the crock pot until I could shred it.. now I have 6oz bags of shredded pulled pork in the freezer which I am putting on a bun, topping with a fried egg and some bbq sauce on a low calorie high fiber bun for lunches. Yum!

    When I have the time, I tend to make either chicken stir-fry or chicken fried rice. They're very versatile and, when done right, fairly healthy.

    If I'm going to cook chicken, I might as well cook a family pack so it's ready and easy for the week ahead.
    Plus, chicken breast is good in a bazillion different ways!

    I usually have leftovers either as is or reinvented into a wrap. I like to make beef/carrot meatballs in a buffalo sauce if i'm craving wings. If I make a roast in my instant pot, I season it initially with steak seasoning. Then after its cooked cooked I divide it into thirds or in half and reseason/sauce depending on what going to do with filling (phillycheese wraps, enchiladas, etc.) also, rotisserie chicken from Costco (or anywhere) goes a long way as various wrap filling, salad toppers, etc.
