It's just a little bloating (water weight) from eating something out of the norm for you. Weight is more than just fat. Everything in your body contributes to your weight.

Was it a dessert that caused you to go over your calorie goal by 3500 calories?

Probably not. Sodium and a high sugar dessert can cause temporary water gain. Being female can cause water weight gain.

It is normal for your weight to increase after a dessert - especially if you typically eat low carb. It is just water weight, though. Go back to your normal eating and your weight will return within a day or two.

Yep. Put that dessert on a scale and you can bet you're going gain weight by that amount once you put it inside you.

Now, will it turn to fat and expand your waist size overnight... eeeeeh....

You're gonna make yourself crazy thinking like that about 1 part of 1 meal. Think more big picture, total calories over days and weeks.

I have dessert every night, It's not going to make you gain weight if you stayed within your calories. If having dessert puts you over your maintenance calories, then yes it will make you gain.
I'm just winging it here as your post is lacking details

@Relaxingmind how many times per day are you weighing yourself? Just stick to first thing in the AM. There are enough day-to-day fluctuations without driving yourself mad with hour-to-hour fluctuations.

Video on how weight fluctuates drastically throughout the day:
