Anyone have an egg muffin recipe?
I'm looking for an easy egg muffin (or egg cup) recipe so I can eat my breakfast on the go.
I'm looking for low calorie/low carb, so I can cook up 6-12 or so in a muffin tin. I have a lot of spinach to use too! I don't use egg beaters - I use regular eggs, but can omit some of the yolks to keep the calories down. Looking for a good tasting recipe!

3/8 cup Eggbeaters - 45 calories
1 slice Galaxy Nutrition brand veggie cheese slice -40 calories
1 Tbsp Smart Balance Flax spread - 60 calories

Hmmm sounds good but I don't have egg beaters, just eggs. And I'm looking for more of a fritatta-esque recipe. Not like a breakfast muffin, but more like eggs and veggies baked in a muffin tin... Do you use milk? I suppose I could look up a fritatta recipe...0

5 eggs
1/3 cup salsa
1 cup shredded cheese (i use mozzarella, but you can use colby jack, cheddar, pepper jack, mexican blend, parmesan, etc)
1 yellow bell pepper
1 cup steamed broccoli florets
1 cup steamed cauliflower florets
optional: onions, garlic, mushrooms (5-6 sliced), etc
pre-heat oven to 350.
steam broccoli and cauliflower (5 minutes in microwave with a little bit of water, covered), allow to cool.
finely chop bell pepper, broccoli and cauliflower.
scramble eggs in a medium bowl.
add salsa, cheese and chopped veggies.
mix well and scoop into well-greased muffin tin. (2 large spoonfuls is 12 muffins)
bake for 30 minutes.
enjoy warm or cool!
p.s. you can add spinach, asparagus, bacon bits, etc.0 -

Ingredients:
3 cups unpacked, fresh spinach, coarsely chopped
2 tsp. minced garlic
2 tsp. dehydrated onion
The equivalent of 5 eggs (I use 1.25 cups liquid egg)
3oz (90g) light feta cheese, crumbled
Salt & pepper to taste
Directions:
1. Preheat oven to 350ºF
2. In a small pan over medium heat, combine spinach, dehydrated onion, and garlic. (The garlic will helped wilt the spinach the spinach, and the water released from the spinach will bring the onion to life... the perfect sequence of events!) Cook for a just a few minutes until the spinach is wilted, and remove from heat.
3. In a small mixing bowl combine egg, feta, spinach mixture, salt & pepper, and stir.
4. Spray 6 cups of a muffin pan with non-stick spray.
5. Fill the muffin cups approximately 2/3 full.
6. Bake for 20 minutes or until egg is set (longer if you're eating right away, as above).
7. Allow to cool a few minutes, then run a knife along the outside of the muffins to loosen before popping them out with a large spoon.
8. Refrigerate or freeze... or enjoy right away!
Makes 6 muffins @ 86 Calories each. I usually eat two for a meal, or one for a snack.0 -
