Favorite Healthy Slow Cooker Recipes

What are your favorite healthy slow cooker recipes? I am looking to build a recipe box for meals I can make either in a slow cooker, or make a lot of and freeze portions. I am in grad school and once classes start...I struggle to find time to cook. Cooking ahead and freezing portions or cooking in the slow cooker helps. Thanks!

bump please. I need these too! LOL
Since I bumped I will tell you that you can put chicken breasts or a lean roast in the crock pot with some low cal bbq sauce like Kraft Light. and let it cook then shred with a fork and measure out with a 1/4 cup measuring cup for sandwiches and you can freeze the portion sizes in zip locks and thaw for quick meals..I use pepperidge farms sandwich flats ...slice up some cucumbers for a "side" and you have a quick low cal meal.
Also, when the cooler weather hits you can do crock pot chili. You can use lean beef and ground turkey or ground chicken.
Oh and crockpot meatloaf too!0 -

Do you use boneless skinless chicken breast? I will for sure be making chili!! Yum!! I love fall/winter food so much more than summer food...but you can't beat summer produce that is for sure!0 -

Yes I do ..but sometimes when I am low on funds I have used boneless thighs or I cook leg quarters whole then peel off the skin and it shreds just fine. The bones just slip right on out. You can use a lean pork roast too! Last time I did the calculation these 1/4 cup servings ranged from 70 to 100 cal depending on the meat. Oh and you can change your chili up ...you can do white chili with chicken and black beans or pinto's. Get some McCormick Chipotle Pepper and it does wonders for foods. You can also cook spaghetti squash in the slow cooker..0
