Looking for low carb recipes!! Running low on ideas.

    I like to make low carb 'pancakes'

    4 large eggs
    2 tbsp cream cheese (I've used less or more, sometimes low-fat or that greek yogurt/cheese blend)
    1-2 packets splenda or a dash liquid spenda
    1/8 tsp salt
    1/4 tsp cream of tartar (optional)

    1. separate egg yolks from egg whites, making sure not to get yolk in your whites.
    2. add cream of tartar to egg whites, beat egg whites on high until stiff peaks form
    3. in a separate bowl, beat egg yolks, salt, splenda, and cream cheese until frothy and fully integrated.
    4. combine meringue and egg yolk mixture, stir gently and sparingly, and immediately drop spoonfuls of mixture into a heated skillet greased with either pam or oil.
    5. Cook until light brown; flip halfway through.

    I love adding the Walden farms products to this, layering it up with the caramel and pancake sauce. It turns out delicious. For a festive change, you can add some pumpkin spice seasoning, too. Haven't tried actual pumpkin puree yet, but I'm tempted to.

    "Pizza" veggies. I love to simmer my spinach, turnip greens, or broccoli, cauliflower or even just a mix of bell peppers, onions, and the like in pizza sauce. Then top with cheese maybe toss in some chicken, meat balls or pepperoni. This also makes a delicious baked fort of thing. This is wonderful when you crave pizza but don't want all that crust.

    I like making tuna melts! Instead of bread though, I bake it on a Portobello mushroom cap. Its delicious. Here is the recipe I use but I halve almost everything, and I only use 1 tbsp. of mayo:

    There are other ways to cut carbs and calories on it too but it cuts out bread so that makes me happy enough.
