Okay as if you haven't guessed, we have LOTS of cucumbers. (12 as of right now) We are growing our own. I really need some great LIGHT in cals recipes!! Please help me :)

    I like to put together cucumbers, red onions, and grape tomatoes and dress with robusto Italian dressing.

    Make cucumber and hummus sandwichs using whole wheat pita.

    I just remembered, last year I made a cucumber water drink...it was really light and refreshing...google cucumber water recipes.

    Oh man, I'm on a cucumber kick. I decided a few weeks ago to replace my wheat thins that I normally eat at lunchtime with cucumber slices. I haven't wanted to go back. So light and refreshing :)

    Anything you do with cucumbers will be light, they're mostly water. I use them like snacks, lightly salted or not. You can also use them to make a lasagna (instead of the noodles) and it's actually really good.. Umm you might also try to get some squash and just eat it as a side dish with some garlic and light butter...OR go and Google 'cucumber recipes' and you'll get oodles! :)

    My everyday dinner is a salad of lots of cucumbers, tomatoes, green peppers, garlic and 50-100 grams of cottage cheese and little bit of vinegar. I enjoy it soooo much..... :-)

    Cucumber Salad:

    Thinly sliced cucumbers
    Grape tomatoes, halved (or diced tomatoes)
    Thinly sliced onion (sweet or red)
    Fresh dill, chopped
    White, distilled vinegar
    TruVia (Spelnda, sugar or other sweetener of choice)

    Mix cucumbers, tomatoes, and onion. Mix vinegar and dill, sweeten and season with black pepper to taste. Pour over cucumber mixture and toss. Chill for 1-2 hours (or longer to allow more flavor absorption) before serving.

    this is a drink recipe. If you aren't into sugar you could easily sub it out.

    My mom makes pickles ever summer with here extra. I like cucumber salads or gazpacho. You could do a cold cucumber soup. I also put them on sandwiches.

    Fix yourself a Pimm's Cup.

    Muddle cucumber in your favorite highball glass and fill with ice. Fill half-way with Pimm's No.1 and fill the rest of the glass with ginger beer (I recommend Barritt's or Reed's). Garnish with a strawberry and cucumber slice.

    Here is a family recipe; I wil alter it to a light verson for you

    at least 2 cucumbers, peeled and sliced. (you can go as many as 6 cucumbers in a batch)
    1 onion sliced (or 2 depending how many cucumbers you put in it)

    1cup splenda or truvia
    1cup light mayo
    1/2cup water
    1/2cup vinigar
    dash of pepper and salt to taste

    mix the splenda/truvia and mayo together
    add water and mix well
    slowly stir in vinigar alittle at a time

    add sliced cucumbers and onions

    then put in fridge for at lease 30min, but leaving them over night is best.

    Cucumber sliced lengthwise to fit the roll
    Tomato slices
    Balsamic Vinegar
    1 Tablespoon Light Cream Cheese

    I like to put this in my Panini Maker.
    Tastes fantastic and is very low cal.

    In addition to my recommendation of a Pimm's Cup a few posts above, keep in mind that nearly every drink containing gin can be made better with a cucumber garnish.

    I've started muddling cucumber into my Tom Collins. Absolutely delightful and it reflects the summer so well. Try a Sapphire Solstice. It's a martini featuring:

    1 part gin
    1 part lemonade
    1/2 part green tea

    Muddle strawberries and cucumber and add the liquids. Give a quick stir and garnish with a cucumber slice.

    Dice cumcumbers with tomatoes and bell peppers and mix with cole slaw dressing, sounds kinda gross, but I love it.

    Try this recipe. My sister got me hooked on it and I completely dislike cottage cheese.

    Cucumbers cut into small chuncks
    Grape tomatoes halved
    1 packet of ranch dressing mix
    fat free cottage cheese.
    Mix together and let chill for an hour.

    Cut the cucumber in boats hollow them out and then scoop some tuna salad mix on it. Or you can do the same but make them into cups.

    I just got a bucket of cucumbers myself.
    I love quartering cucumber slices with some fresh grated parmesean and italian dressing.
    You could also cut some pitas up like a pie, put a little bit of dill dip on top of that, and put a cucumber on top of that. Super delicious cucumber sandwiches.
  • I made a chick pea salad using one can chick peas (garbanzo beans), 1 chopped onion, 1 chopped cucumber, 1 chopped red pepper, 2 tablespoons balsamic vinegar, and 3 tablespoons olive oil.

    *I added a little bit of regular vinegar because the balsamic was a bit too strong for my taste.

    1/4 cup is 52 calories according to this site.

    I just made a new recipe with cucumbers and it was delish!

    mix together:
    Cucumbers (i used 2 japanese) peeled, seeded and chopped
    fresh chopped oregano (to taste)
    salt to taste (optional)
    crumbled Feta cheese (sheeps milk is best) however much you like
    toasted pine nuts (i used handful)

    dressing:
    1/4c red wine vinegar
    3 tblsp chopped shallots
    1/4c olive oil
    pinch of salt

    add shallots to vinegar and let stand for 10 mins
    add salt
    whisk in oil
    pour over cucmbers

    Use your cucumbers to make some tzatziki! And then... eat the cucumbers WITH the tzatziki, haha :D.
    What I always do for lunch is just pack one whole small cucumber and about 1/4 cup low cal tzatziki (recipe from skinnytaste: http://www.skinnytaste.com/2010/08/skinny-tzatziki.html). Dip the cucumber into the tzatziki and chow down. It's kind of fun to eat too.

    I like making veggie sandwiches with cucumbers. I use a mini bagel or a whole wheat low cal bagel, toasted, with a smidgeon of light cream cheese and top it with cucumber slices, red pepper, red onion, avocado, and a dash of salt and pepper. VERY filling, low cal, and quite tasty. This is a summertime favorite with my church ladies.

    My friend brought me a delicious salad today made with orzo, cucumbers, grape tomatoes, basil and feta cheese. It was a great summer salad ;)

    I went to the store and came home, and created a very tasty low cal cucumber salad:

    3 cucumbers
    1/4 or less red onion
    organic grape tomatoes (1 pint)
    fresh mozzarella cheese or feta (this time I used the mozzarella) The container I bought only had 4 balls in it, so I used just 1, next time Ill use 2
    Fat free Italian dressing

    Mine worked out to 63 calories a cup :)
