Hello all,
Im gonna be slow cooking some chicken in the crock pot with salsa and other Mexican flavors tonight. i'm looking for a good healthy Mexican style side dish to have with it. Suggestions?

Fat Free refried beans are great! With fat free cheese on them....even top them with fat free sour cream.0

I like to slice up zucchini and toss it in a baking dish with fresh salsa (preferrably with Cilantro. If it doesn't have it, I add it) and bake until the zucchini is cooked through and salsa is bubbling. I am TRYING to go dairy free right now so I don't put cheese on top but you could add a couple of tablespoons of shredded cheese to the top. I've also thrown some black beans to this recipe if I have the calories to spare.0

I like to mix a can of black beans with a bag of frozen (cooked) corn along with salsa. Very yummy, very simple, and very healthy!

The Fat free beans are great and any grilled or stir fry veggies. Just try to limit the carbs and starches like rice, corn and peas.

I just made it this weekend and am eating it for lunch this week. It tastes like squash in a cheese sauce! I also threw in some black beans to bump up the protein and fiber.0 -
