Spicy Slow Cooker Black Bean Soup

Made this last week and love it! I know it's hot out (I'm in Texas) but this was easy and so good.

1 lb black beans soaked overnight (I quick soak mine)
4 tsp diced jalapeno peppers
6 cups chicken broth (I used not chick'n bouillon cubes)
1/2 tsp garlic powder
1 TBS chili powder
1 tsp ground cumin
1 tsp cayenne pepper
3/4 tsp ground black pepper
1/2 tsp hot pepper sauce

1. drain soaked black beans and rinse.
2. combine all ingredients.
3. cook on high for 4 hours. Reduce heat to low and continue cooking for 2 hrs.

Add garnishes: 1/4 cup brown rice, fat free sour cream, avocado etc...very filling and healthy too!

    You soak them in water overnight. There are instructions on the bag usually.

    Serving size is six- 1 cup soup. (I add 1/4-1/2 cup brown rice upon serving)

    I make something really similar and serve it with a dollop of nonfat greek yogurt.

    Black beans in the slow-cooker are fantastic. Great post!

    EDITED TO ADD: You don't have to soak the beans overnight. It serves no purpose. Not even kidding. Some people think it releases a gas (it doesn't) or softens them but it's unnecessary if using the slow cooker for 5-7 hours. :)

    just soak the beans in water either over night or the quick soak method. For quick method, I put beans in a large pot of boiling water and cook for 3 minutes. I then turn off the burner, put a lid on the pot and leave to soak for 1 hr. So easy, just takes some time either the night before (put beans in water overnight to just sit) or soak in hot water for 1 hr.

    Good spicy flavor!! I just love soups-especially ones that cook in a crock pot! Fresh cilantro and diced fresh tomato also are wonderful toppers.

    Yeah, if you're using a slow cooker you TOTALLY don't need to soak them. I never do. And they're perfect in about 5 hours.

    I plugged it into the recipe section:1 cup= 1 serving

    129 calories, 20 carbs, 2g fat, 8g protein, 0 sugar, 7g fiber

    I made it again this week. It thickens in the fridge after cooling and I like the broth part. I sometimes add a couple tsp of water to thin it before I heat- still tastes great! Sodium depends on the type of broth. I used a veggie/chicken flavored cube from whole foods.
