Ingredient listing

Do ingredients matter in weight gain/loss, or is it basically calories that determine weight gain and loss?

Calories are important for weight loss.

Protein is important to help preserve muscle and tissue, which helps ensure the weight you lose is mostly fat.
Fat is important for metabolic functions.
Carbs are a good source of fiber and energy.
Fiber is important for digestion, blood pressure, cholesterol, and feeling full.
Sugar and sodium can be important if you have certain medical issues.
Vitamins and minerals are important for health.

Overall you need to worry about calories, but the others should be taken into consideration along the way.

I know that all sounds overwhelming. Focus on calories first. Once you get the hang of that then you can pick the next thing on the list I shared as something to think about.

Higher protein can help people feel full. Some find higher fat filling. Taking a look at carb intake compared to hunger helps others. You don't have to do it all at once. It's okay to just think about calories in the beginning.
