Need support buddy for long-term healthy habits

A few facts -
Mostly vegan diet with some restrictions
5'4 and CW 140, looking to stay within the 120-140 range
Goals - easily carry groceries up the stairs and create long-term habits
A little about me -
I've been struggling on and off for years trying to create sustainable habits. This time around, I'm ready to go all in. No more starving, extreme soreness, or stressing when I go over calories.
I'm home a lot, I work right next to my bed and my stationary bike but I think the easy access to food has caused me to gain weight recently. Though I'm not concerned about my weight, I would like to keep things in check.
Lately eating has become a very frustrating event. I am learning what foods make me a gassy mess and that includes pretty much any garlic, onion, or oil. Right now I'm gassy because I added a little oil to my lunch in order to cook it and it's SO GROSS! I'm going to try cooking with coconut oil. What's really frustrating is that I switched from olive to canola, and now canola makes me gassy too.
Over the past nine months I have become more and more vegan almost to the point where it's unconscious because I just feel better. Part of me hates that cheese now makes me sick, but the other part of me is kind of glad. I know that the high fiber is getting me gassy, but the other dietary limitations are so annoying. I've thought about getting drugs to help or get some kind of diagnosis however I've always had the value of naturally resolving the problem. If it makes me gassy, is my body telling me it's bad for me?
My biggest struggle is that I have no one to talk to about my diet and exercise. I've tried talking to friends and family, but since they aren't in the same boat or even in the ocean, they just don't get it. Definitely make sure you are getting enough water. A high fiber diet combined with low fluid intake will make anyone gassy.0

I wish I wasn't, but I drink 32-64oz per day so it can't be that. I also did some research and started doing things like eating slower and taking beano with certain foods or having it handy when I go out.0
