Chicken sausage stuffed squash

This was a winner in my house, even with kids 4 and 6 years. I switched the mushrooms for 8 oz white mushrooms, roughly chopped, and added 2 tbsp olive oil (some to coat the squash, the rest to sautée the filling).

Next time I'll mix the cheese into the filling instead of putting it on top. Maybe sub the parm cheese for something less dry/more gooey.
