    Ha! The only way I've eaten beef tongue and liked it is thin sliced, marinated in teriyaki and fried.
    I can take cilantro or leave it.

    I thought the same thing until I tried it. Delicious.

    Cheek meat (cabeza) is awesome too, as is tripas (intestines). Not so much a fan of cesos (brains) though.

    *Sigh*. I guess I'll never be able to experience what some of you consider “real tacos" since, when I was conceived, my tongue/brain won the “cilantro tastes like soap” genetic lottery. LOL. I prefer not to have soap flavor on my tacos.

    I admit that I have dreams about tacos. Decadent dreams about tacos, and the pulchritudinous glory of stuffing them in my face. And since I'm a Texan, my internal vision of taco perfection has three basic characteristics:
    1.) Crunchy. Perfectly crunchy, so you bite through it rather than shattering it along the midline and dumping it down your shirt. I have only ever encountered a perfect crunchy taco shell once, out of the back of a roach coach in Houston when I was too drunk to read, but not too drunk to demand tacos from the designated driver.

    2.) Ground beef. Spicy ground beef, running with that delicious orange grease out the back, to be later mixed with the refried beans. No fillers except maybe some sauteed onion.

    3.) Dressed with a handful of iceberg lettuce, a spoon of nice pico de gallo, and a generous shroud of yellow cheddar. Maybe colby jack if you want to get adventurous.

    Left to my own devices, or simply with inadequate adult supervision, I can, have, and will put away a half dozen of them at my favorite hole in the wall. And I freely admit that they are the gringo-est of gringo tacos. But they haunt me. They haunt me like a salty Mexican succubus that tortures me in the night and leaves in the morning with just the faintest whiff of cumin.

    Awake, I'll throw down with your carne asada, your barbacoa, lengua con cebolla, al pastor, tripa, pescados fritos. Bring on the Korean fusion with bulgogi and kimchi. Corn tortillas? Sure. Queso blanco? Great. Awake, I might even demean my beloved Crunchy Beef compared to more traditional, authentic versions.

    But at night, there's only one incarnation of perfection...

    I'm pretty sure I gain 10 psychosomatic pounds after a night of vivid taco dreams.

    My neck is now sore from looking at your taco. Why in the world would you post it sideways? Cute kid though. Messy face, but what do you expect when eating tacos?
