Best healthy packable food ideas for week-long trip?

On Wednesday I'm leaving for an 8-day motorcycle trip and am worried about being able to stay on track. I'd like to prepare myself as best I can so I'm not at the mercy of restaurants/convenience stores. I need ideas for healthy foods and snacks that will last a couple days in a bag on a motorcycle in warm weather. I'll be able to hit up a grocery store every few days. I'm trying to eat low (not no) carbs and sugar, high protein, with a calorie goal of 1400/day.
So far my ideas are:
Carrots
Dry salami
Cheese sticks (sparingly)
Bell pepper
Jerky
Nut/seed-heavy trail mix
Canned tuna with mayo/mustard packets
100 Calorie almond packs
Thanks in advance for the suggestions!

Are you into protein bars at all? That might be a viable option. Quest bars or the OhYeah ONE bars are popular choices for lower carb.
In addition to jerky, pork rinds are a pretty good choice.1 -
Many gas stations sell little packages that contain 2 boiled eggs. I know you said you'd be able to get to a grocery store every few days but I figured you'll be at gas stations regularly. Boiled eggs are handy since they are quick to eat.1

I have a few bikes. I'll be riding a 2007 Triumph Bonneville, but I also have a 2005 Suzuki DR650, a 1965 Honda Superhawk, and am co-owner of a 1986 Honda CR125 dirt bike that we are rebuilding. I'm heading from the Bay Area down to Kernville, then to Joshua Tree for an annual all-female moto camping event called Babes Ride Out, then going up to Death Valley, then Mammoth Lakes, then back home through Yosemite.

sounds cool. i have a 03 vstar. i was the only bike i've even seen on the roads today. just cuz is 48 degrees out! hey the sun is shining! i'm riding!
I have a 09 yz250f and we recently just dumped a KTM 250Sxf. my son rides motocross, i'm to old so i'm sticking to the street these days.

I'm an odd one but I actually like riding in bad weather. I did a presentation a few weeks ago about riding in wet weather. Snow and ice is a different story, though.
The Bonnie is capable of more than it's given credit for!
You're never too old for offroad. Motocross is a bit much, though. I'm planning a round-the-world trip next year on my DR. I'm only 32, but a good portion of the people that do it are retirement age and up!
