I made this myself last week...it's based off a bunch of recipes. It turned out so good, I only wished I had a bigger crock pot
The beauty of this recipe is that as long as you use the basics, you can't go wrong. My motto is definitely taste as you go and adjust as needed. Go nuts with the seasoning or stay light....I bet it will still be delicious
Turkey Sausage & Chicken Jumbalaya
Serves 6....Serving size is one cup....Don't forget to add the calories in for the rice if you use any!
Honeysuckle White - Turkey Italian Sausage Hot, 2 link
Chicken Breast - Boneless and Skinless, 336 g / 4oz (Shredded)
Del Monte - Diced Tomatoes With Basil, Garlic & Oregano, 1 container (1 4/5 cups ea.)
Large Red Bell Pepper
Large Green Bell Pepper
Medium Onion
2 to 2.5 teaspoons pre-chopped garlic in olive oil (depending on your taste)
McCormick Cajun Seasoning (to taste...I sprinkled in a lot and tasted as I went)
Dash of Oregano
Sprinkling of paprika and cayenne pepper (to taste...I put in a moderate amount and tasted as I went)
College Inn Chicken Broth - Fat Free & Low Sodium - Chicken Broth, 2 cup
1 tbsp olive oil
1 cup brown rice (uncooked...will be cooked separately...not included in nutritional information)
Directions:
Rub chicken with Cajun seasoning...Pre-cook chicken with a little of the chicken broth and cajun seasoning...shred.
Pre-cook sausage with a very small amount of the olive oil, cut into small chunks.
Saute chopped onion & garlic in olive oil on medium setting until very slightly browned.
Add in chopped peppers on medium setting.
Stir for 5 minutes...onions should be lightly browned by this point.
Transfer onion & peppers to crock pot, add chicken and sausage.
Add can of diced tomatoes.
Add 2 cups chicken broth.
Season to taste.
Cook on low for 2-3 hours.
Cook rice separately, serve over rice (I used Uncle Ben's Brown 90 second rice).

Mccormick - Minced Garlic With Extra Virgin Olive Oil, 1.5 tsp (4.5g) 15
Olive Oil - Extra Virgin, 1 tbsp 120
