Chicken...what to do with it?

I have a pound and a half of boneless, skinless chicken breast...any suggestions on what to do with it for dinner? (that is quick and healthy?) Thanks!!

    cut into strips, low sodium lemon pepper seasoning, serve with broccoli sauteed with garlic and onion....when you flip the chicken squeeze the juice of half a lemon into the pan to keep it moist and give it a kick! so basic but SO quick, easy and delicious!

    last night I cubed up some chicken breast and cooked it with onion and a little spray oil, I added cooked pasta and mixed in a jar of creamy tomato Dolmio pasta bake sauce. I put this on top of cooked broccolli. Topped with a little grated low fat cheese and put it in oven, it was soooo lush.yum yum.
  • cut into strips, or even little bite sizes...cut up some bell peppers, and other veggies, a little bit of olive oil, and some minced garlic (or garlic powder)..cook on the stovetop until chicken is cooked thru!.there's your stir fry! put over some brown rice or eat as is :)

    You can basically boil it in the microwave, thats what I do if i don't have a lot of time.

    Cut into strips(for faster cooking) and put them in a microwave safe container with either water or broth.

    I then chill the chicken and cut it into bite size pieces and put it into a fat free low carb tortilla wrap with humus spread on it and salad stuff. All wrapped up its about 200-400 calories depending on what you put in it, and its AMAZING!! so filling and delicious

    Is this for tonight?
    Put the chicken in a pot, season it how you see fit (I add season salt, pepper & garlic powder), add cans of Rotel Tomatoes (2 for the amount of chicken you have), add Chicken broth to cover.
    Boil the chicken for about 20-30 minutes, watch it so you don't run out of liquid.
    Once that is done, pull the chicken out and shred it with a fork.
    Drain some of the broth, reserving most of the tomatoes & chilis.
    Throw chicken back in and mix together.

    Serve this on top of salad greens.

    OR

    Add a can of black beans, drained and some corn and serve with rice or on corn tortillas for chicken tacos.

    This is one of my favorite go to recipes. I usually throw all this in a crock pot and let it cook on low all day (the chicken shreds easier that way), but I have done it several times on the stove top like I listed above.

    Poached chicken is one of our family favourites:

    Cover the breasts with some good chicken stock and simmer for around 20 minutes.

    Serve with baby potatoes crushed with some fresh herbs, or sweet potato mash, or a large salad.

    Any chicken leftover is great cold in salads or sandwiches.

    And the poaching liquid is great stock for soup or risotto.

    I threw some in a crock pot today with Mrs dash chicken blend and some lemon pepper seasoning.... served it over Ronzini Smart taste Rotini with a little reduced sodium/fat cream of mushroom soup. Was pretty good along with my sliced up tomato and def filled me up.... bright side my kids will eat it and I made a double batch so tomorrow I can reheat it!

    Here are some of my recipes

    Chicken Ceasar Salad.
    1-2 Chicken breasts cooked (I grill on the griddler) 4 cups hears of romaine lettuce. 1/4 cup parmesian
    cheese. 2 Tbsp Ceasar dressing and a sprinkling of croutons. Throw them in a lidded bowl and shake.

    Chicken Wraps
    Take a tortilla shell. Spread on a little refried beans, 1/2 a chicken breast, 1/4 cup cheese (your choice. I prefer fat free cheddar. Hubby prefers Mexican), 1 Tbsp sour cream and 1 Tbsp Salsa

    BBQ chicken
    Grill a chicken breast on the Griddler. After cooked put under the broiler in the oven with 1 Tbsp bbq and 1/4 cheddar cheese. I usually split this in half and either give us each half or put one in my lunch for the next day

    General Stifry
    Combine in a wok 1 chicken breast cooked, 1/2 a bag of stir fry veggies, 2 Tbsp chicken stock and 2 Tbsp Iron Chef General. Tso's sauce. Warm in walk in sever over jasmine rice.

    Hope some of these help. If you don't have a griddler, a george foreman or just grilling it would work. Also you can cook and freeze the breast to use for later.

    I buy soyaki sauce from Trader joe's but other grocery stores sell it too. I use pam and onions brown chicken a little then through in crockpot pour sauce over cook4 hrs on high depending on crockpot. Make brown rice with it . Also use I can't believe it's not butter light or olive oil and garlic to fry zucchini and yellow squash like bennihana.

    Grill the chicken then in fry pan, spray a whole grain tortilla with olive oil spray put in pan, add grilled chicken cut up some veggies from any other leftover or some sliced tomatoes, a 1/4 cup lo fat shredded mozzarella cheese and top with another whole grain tortilla. Flip when browned and there you have a tasty, crunchy, healthy quesadilla. We couldn't live with out them!!
