Zucchini Recipes?

I gew grew so many HUGE zucchinis and I'm trying to think of what I could do with them.. Does anyone have some low-calorie zucchini recipes for lunch or dinner?

    slice them vertically, drizzle with olive oil, kosher salt and pepper and grill. Yummy and easy!
  • I cut in circle and add to the chicken.
    other way is cut in diced and put a little olive oil in a pan , add garlic, basil,onion, zuchini...mix everithing , put a little salt and parmesan cheese .

    recently someone posted a zucchini pizza recipe. if you search it, it may come up. it looked super tasty though. The zucchini took the place of the crust.

    I like to slice them into strips and use in place of spaghetti noodles. I also like them in stir fry, or grilled with mrs Dash!!

    Zucchini brownies were my favorite thing before I had to quit chocolate. They're healthier as you don't use as much oil and you don't notice the zucchini if you do a fine-shred instead of a course one.

    total calories for this dish is around 140cal

    Ingredients
    1 med - large zucchini, sliced just over 1cm thick pieces
    1 punnet (or equal size portion to zucchini) of pomodero tomatoes or plum tomatoes (cherry tomatoes will do too but they're boring), halve them lengthways
    1 tbsp olive oil (I've changed it down to 1/2 tbsp to reduce calories)
    dried mixed herbs
    2 stalks of fresh basil, just needs leaves
    basalmic vinegar
    Salt

    Directions
    1. heat oil in a saucepan. Once hot add zucchini and stir around for about 30 seconds
    2. add generous sprinkles of dried mixed herbs, sprinkles of salt and a splash of vinegar. stir around again for another 20 seconds
    3. add tomatoes. stir and then add again another generous sprinkle of dried mixed herbs, a bit of salt and a splash of vinegar. Mix thoroughly for about 20 seconds more
    4. before tomatoes get mushy tear the basil leaves into the mixture and stir around. Once the basil leaves start to wilt then turn off stove.

    All done! I would load a picture but I don't know how to do it! :(

    I saute' zucchini in a pan or use leftover grilled zucchini and add to an omelette. It may not sound great but trust me... it's delicious. Also, great on pizza!

  • I LOVE zucchini. It has become my favorite vegetable. Here's my latest favorite way to prepare it... it's about 60 calories per 1/8th of the recipe. If I make it with one large zucchini, it comes out to about 2.5 patties. They're SO delicious, though. And you could definitely cut the parmesan cheese in half, or possibly omit it all together to save some calories.

    Another way I like to cook it is to shred the zucchini using a cheese grater (like you would a block of cheese). Saute it in a frypan over medium heat (I don't use any oil or butter, but some people do). Add a teaspoon of garlic (more if you're a garlic person), salt and pepper to taste and a few tablespoons of shredded cheddar cheese. Saute until cheese is melted and zucchini is warm through. Serve using a slotted spoon, as zucchini is very watery.

    Veggie lasagna
    grilled and drizzled with balsamic vinegar
    sauteed then put in pasta with olive oil, lemon, garlic and black pepper
    Stuff it!
    Saute and add into omelettes
    Add into pilaf
    Stir fry
