Oatmeal Pancakes

1/2 cup oatmeal - grind in a blender to create an oat flour
1/2 tsp baking powder
1 egg
1/3 cup skim milk. this is apporoximate. for a thinner pancake add more milk, for a thicker pancake add less milk
spray a skillet with non-stick cooking spray and cook over med high heat.
I like to top it with fresh berries or organic peanut butter
* this is a wonderful, high fiber, filling substitue for a regular pancake made with white flour

I haven't tried oatmeal yet, but I have used multi-grain and buckwheat for batter. Add some flax or hemp seeds for protein and omega-3's. Maybe a banana, almonds, or frozen blueberries. I always switch it up. It's super filling and if you top it of with yogurt and fresh fruit it's like cake for breakfast!0
