Sucralose?

Can you find pure sucralose in stores? Has anyone baked with it? I want to make a pumpkin cheesecake for my diabetic mom but she only likes sucralose as sweetener (I know that Splenda has another ingredient too) and I can't remember seeing it in the store.

    The other ingredients of Splenda (dextrose, maltodextrin) are bulking agents. They are intended to add volume. "Pure sucralose" would have such a tiny volume that it would be too hard to use.

    Same with aspartame. Equal contains aspartame and bulking agents.

    I'd just be careful using it, since it will require a lot less of the product than Splenda to sweeten a recipe.

    There are Splenda drops now, and I found them in Wegmans. I usually order them from Amazon. I think they'd be okay in a cheesecake, but wouldn't use them for anything else.

    To have an idea how liquid artificial sweeteners work in recipes, look at amyshealthybaking.com/. She usually uses Stevia drops, but I've subbed out the liquid sucralose just fine.

    My store doesn't have sucralose drops, but in the coffee section, it does have sucralose syrups (splenda w more liquid than the drops.) I use this a lot.

    The biggest challenge adapting recipes for me is the step where you beat butter with sugar until it's light & fluffy. Sucralose doesn't seem to blend well with butter so I add it later in the process and just beat the butter by itself. I wouldn't say I've ever achieved "fluffy."

    Good luck with the cheesecake. It's sweet of you to do something nice for your mom. I made my diabetic mom a flourless sugarless lemon ricotta cake. She said it tasted great with maple syrup poured over it, which I took to mean she thought it sucked. Last time I made the effort. Hope your mom is appreciative!
