Hi,

Does anyone have any good veggie meals that don't contain cheese? It gives me migraines :( I really want to stop eating junk food just because I don't like the majority of veggie food on offer :/

    My husband is allergic to cheese so we often stir fry veggies with whole wheat pasta or rice. I'll add almonds or pine nuts for protein. If you google stir fry recipes, you'll find a lot that don't contain cheese.
  • snap peas, w/garlic, w/almonds, grilled or asparagus grilled, you can use a little olive oil if needed

    You can always substitute soy cheese or rice cheese in place of the dairy kind, if dairy is the problem for you. We're vegetarians and we eat lots of w/w pastas, veggie and tofu stir fries, veggie burgers with veggies on the side. You can even make lasagna with blended tofu as a filler instead of ricotta.
  • I don't stir too far off the path when it comes to veggies. I make a lot of salads...so I try to come up with new things with salads. Different types of lett., dressings, vegs, etc. But I make a ton of things with spinach. Eggs w/ spinach, chicken and spinach quesadillas are my fav.

    Oh, man. Squash risotto, African groundnut (peanut) stew, grilled anything (broccoli, cauliflower, zucchini, carrots, portobello mushrooms, asparagus, sweet potato), vegetarian sushi, chickpea curry, veggie wraps with hummus or greek yogurt if you can have that, chili loaded up with vegetables like zucchini and mushrooms and celery and broccoli, vegetarian tortillas with lots of cooked peppers and onions, vegetarian coconut curry with asian eggplant and sweet potato and whatever other vegetable you think would taste good, asian stir-fries, blackened brussel sprouts ...

    In other words: try ethnic food. People in other countries, especially asian countries like Thailand, Japan, China, India, Vietnam, Mongolia, tend to be much more creative with their vegetables than we in the west. ; ) Also, try VegWeb.com for lots and lots of great user-submitted recipes.

    Agree with greej Indian and Thai food is yummy and made with spices, vegetables and coconut milk instead of cream and is delish! I want some now actually!
