Food prep lunch ideas

I've decided to give food prep a go.
I don't like spicy food or peppers.
Looking for some ideas

    I usually have a small tortilla filled with chicken and guacamole, tomatoes, and spinach. with some veggies on the side :)

    I make a salad just about every day. I pack my lunch while I'm making breakfast, so I can log both meals at the same time.

    Typical salad will be 300 - 400 g of greens (cole slaw mix, kale, napa cabbage spinach, lettuce, shredded broccoli), tomatoes, cucumbers, a protein (cheese, rice protein powder, hard boiled egg, tuna, leftover chicken), and dressing. I toss it all in a large mixing bowl to evenly distribute the ingredients, then transfer it into a snap-top-lidded container for transport.

    I use an insulated lunch bag because I don't have access to a fridge--but it keeps things at a reasonable temperature. It's also why I like the "hard" greens like kale and napa. Lettuce tends to wilt.

    Make a huge batch of steel cut oats (like 3 cups dry), and freeze it in muffin tins sprayed with butter or coconut oil spray. Defrost partially for 15 min and pop them out and store them in freezer bags. You can microwave the "muffins" and it's like having fresh oatmeal. You can add almond butter, honey, walnuts, cinnamon, etc.

    Another idea is use a crock pot and cook a huge roast, or a couple of whole chickens and portion that out and put those in the fridge and/or freezer and use as needed.

    I boil up 10 or so eggs at the start of the week and make a simple salad with a couple of eggs, a whole tin of tuna, beetroot and then whatever greens I have in the house. Sometimes I add sweet corn/tomatoes etc. It takes 2 mins to make and I do it each morning. If I don't fancy salad, I'll have whatever leftovers we had from the night before (today I'm having salsa chicken done in the slow cooker, super easy).

    Sliced turkey with loads of iceberg lettuce, onion and tomato in a wholemeal pits ☺️

    Frittata and side salad, dressing on the side
    Chicken and broccoli with General Tso's or BBQ sauce over rice
    Herbed chicken over Parmesan and mushroom orzo + green beans
    Cauliflower and cheese chowder
    Beef and broccoli stir fry
    Baked breaded turkey cutlets and green bean casserole
    Pork chops over barley (cooked in chicken stock for more flavor) and Brussels Sprouts
    Black bean quesadillas w/ salsa
    Salmon patties over salad with lemon viniagarette (on the side until time to eat)
    Freezer breakfast sandwiches with eggs, veggies, cheese and meat if you want it

    All easy to prep in big batches, they freeze well too.

    I like wraps with cream cheese ..dried cranberries ..turkey and spinach..sometimes ill add feta or goat cheese

    I make salads ahead - up to 5. Layer heavy stuff on the bottom- beans, cukes, cabbage, cheese whatever you like.
    Add greens at the top so they don't get squished. Portion dressing in mini containers and pop inside the side of your container. You can also do these in big mason jars, with dressing at the bottom. Then each day toss and eat. Yay! All the chopping done once!

    Love using the crock pot to make batches of things:
    chicken tortilla soup
    black bean soup
    taco soup
    tomato soup
    bbq chicken
    shredded chicken tacos with bell peppers
    roast and potatoes and carrots
    chicken and rice

    Look up some slow cooker recipes on allrecipes.com and you'll be blown away by the number of things that you can make big batches of and either use all week or freeze for later.

    I load on up veggies. Wash & prep them so I can throw them in my lunch all week
    hard boil some eggs
    buy a rotisserie chicken & pull the meat off, freeze in serving size baggies to add to salads
    sometimes I'll make a soup and freeze in individual sizes so I can pull one out.


    I keep Frank's hot sauce & salad dressing at work. ALso a big bowl for salad (I like them big & tossed), knife, fork, spoon

    Just made my first turkey burger, it was really good. I was getting tired of always having a salad. does anyone know some healthy lunch ideas?

    I recently started food prep too. I like to do soups. Amazon has these great freezer containers. I will make a big pot, throw I'm some cooked ground turkey, or chicken, black beans or kidney beans and my favorite veggies of the week. Cook then put in containers, freeze and grab and go before work. By the time I get to lunch the soul has started to defrost. It helps in transporting the soup too.

    This week:
    - Mushroom quinoa + london broil
    - Broccoli cups (broccoli + cheese + egg + almond flour and bake in muffin tins) + Ham roll-ups (spread thin layer of cream cheese + garlic on tortilla) + ham + onions +???

    Other weeks:
    - chicken + brown rice + roasted asparagus
    - salmon + brown rice + roasted veggie
    - tuna (in a pouch - tons of different flavors) + boiled egg + salad
    - soup (my fave is crab soup = ~300cals + extra for crackers)
    - leftovers (just make more during dinner)
