Alfredo Sauce

Okay, so fettuccine alfredo is my favorite food. I have modified my mother’s delicious, but very calorie heavy recipe and I tried it out tonight. Delicious!
2 C. Shredded Parmesan Cheese
1 C. Whole Milk
1Tbsp Smart Balance (or Butter)
Throw ingredients together into the top of a double boiler.* Cover with lid. Let water underneath boil 15 minutes or until sauce is smooth. Serve over your favorite pasta. I recommend Fiber Gourmet to get the most bang for your calories.
*If you don't have a double boiler take two pots that are similar, or the same size. Wrap heavy duty aluminum foil over the top of the larger pot, poke a few small holes and place smaller pot on top.
Serving: 1/4 Cup

Protien: 14

Sodium: 460

hannah- have you ever tried using nutritional yeast. sounds strange I know but it is really good on dishes like this. It has a sharp almost cheesy flavor0 -
