Black Bean, Corn, and Couscous Salad
I've made this recipe many times and company loves it! A nice summer side dish to add color and flare to your main entree. As leftovers, I've added diced grilled chicken breast into the salad for a perfect lunch. Enjoy!
1 (10 ounce) box dry plain couscous
1 (16 ounce) bag frozen corn
1 (15ounce) can black beans, rinsed and drained
4 medium green onions, sliced
1 medium red bell pepper, finely chopped
2 garlic cloves, minced
Juice of 2 lemons (1/4 cup)
1/4 cup evoo
1 tsp salt
Coarsely ground black pepper
1. Prepare couscous according to package directions. To cool quickly, spread the couscous on a large baking sheet in a thin layer and let stand for 10 minutes.
2. Combine cooled couscous, corn, beans, green onions, bell pepper, and garlic in a bowl; mix gently. Add lemon juice and olive oil. Season with salt and pepper.
I like to add minced jalapeno and cilantro for an extra kick!
Serves 12
per serving: 190 calories, 6g fat, 6g protein, 30g carbohydrates, 4g fiber, 320mg sodium

I make this all the time in the summer, but with lime juice instead of lemon. Sometimes I add quinoa to it, and I've recently started adding blanched broccoli, which really bulks it up in a healthy way. LOVE!0
