Would love any suggestions for low-fat, plant based recipes that are quick and easy. Thanks!!

    Chickpea & spinach 10 minutes curry

    Fry off a finely chopped onion with chopped ginger and garlic, add a little water to stop sticking. As the onion is getting cooked add curry powder and spices of your choice. Add in some quartered button or chestnut mushrooms, keep cooking, adding a little water as required to stop sticking.

    Add a tin of whole chickpeas and a tin of chopped tomatoes. Let it all begin to bubble together. Add more spice and salt to taste. Add frozen or fresh whole leaf spinach at the end and stir in.

    Serve in a big bowl and enjoy.

    Tasty and literally takes 10-15 mins tops.

    I hope this helps.
    I cook a bag of lentils in a soup pot (bring to a boil, simmer, and let sit until they are soft -- we lack an enzyme to digest the shell).
    Cut up whatever vegetables you have in the fridge and simmer in broth, water, or stir fry in olive oil. I like yellow and green squash, tomatoes, onions, carrots, etc.
    Add some spice. I like McCormick's garlic pepper and Mexican spice.
    You can combine the lentils and vegetables or leave them separate.

    ** The quick and easy part **

    If I do the above, I have food for several days. I just have to heat some up which takes about 2 minutes. I add steamed leafy greens like kale or collards.

    Lentils are high in iron and good protein. One cup has 18 G protein.

    I think the George Foreman Grill makes the best quick & easy plant based meals. If you use foil on the grill then there's practically zero clean up. I cook everything on it. Sweet potatoes, potatoes, squash and even frozen broccoli.

    Thanks so much! I've stopped using foil in favor of parchment paper as I've heard that the aluminum is bad for you. Can you grill on parchment?
