I have been most successful at meal prepping and using it to stay on-plan, by doing what Rachel Ray calls "Cook for a day, eat for a week". I have a recipe for a crockpot chili that I developed, that I think is pretty amazing. Add me if you like, and I'll send you the recipe...
I've got many, many others, also...0 -
That's awesome, congrats on the weight loss! I made vegetable chili for the first time and it turned out great! Here's the recipe:
Vegetable stock, 3-4 cups
Tomato paste, 4-6 tbsp
Canned tomatoes, 1 can
Sweet potato, chopped
Black beans (no salt added), 1 can
Green bell pepper, chopped
Onion, chopped
Paprika, 1 tbsp
Garlic powder, 3 tsp
Cumin, 3 tsp
Mrs. Dash Tomato Basil Garlic, 5 tsp
Salt, 3 tsp (or to taste)
1. Dump all the ingredients in a big ol' pot with 3 cups of stock. High heat for 30 mins.
2. After 30 mins turn down heat to low-medium for 2.5 hours.
3. Add stock if too thick, add tomato paste if too thin.
This is about 10 servings-- dinner for days (or a few days if you have a family)
Sorry if this is a lot I loooove cooking, especially when it doesn't burn!0
