    An MFP friend's egg recipe. Thought it looked marvelous, being that I usually am not such an omelette person ... Thinking to knock this out sometime this week.

    I make a fritta alot--it's just whipped up eggs, a little salt and whatever you want to throw in--spinach, bacon, ham, onion, garlic, cheese, tomatoe, zucchine, etc.... Heat up a nonstick frying pan and add a little olive oil until hot. Pour in egg mixture and cook until set (I sometimes lift up the edges and let the liquid egg flow under) There shouldn't be much liquid egg on top and the bottom should be a nice golden brown. Now, this is the part that's tricky--Get a big plate and slide the fritta on it. Then add another drop of oil to hot pan and then...flip the fritta soft side down into the pan. Careful--oil can get you, so I jump back. Once the bottom is also golden, slide back onto plate, cut into wedges and serve. You need a really good nonstick frying pan, and a large spatula to make this work. If you're afraid to flip it, you can cover a few minutes so the top will cook. The size of the pan depends on how many eggs you're doing. I do 8 for the whole family of 5. Too many vegetables will make your fritta crumble--start off with less until you get used to it.

    Eggs with polenta and tomatoes, eggs and salsa breakfast burritos ( or lettuce wrap ), meat lovers eggs ( bacon bits and ham), eggs and tempeh bacon, eggs with kale and Gouda and Parmesan, egg frittatas, soft boiled eggs, hard boiled eggs, egg salad, scrambled eggs with hot dogs or sausage on top of baby greens, eggs with pea shoots, egg cooked in a avacado with sriracha, omelette of all kinds, eggs with onions, chives, mushrooms and queso, egg, burger hashbrowns n cheese, hash browns eggs n cheese, riced cauliflower with chopped up spicy chicken ( or fake chicken) patties or potatoes, sausage egg and cheese croissant, bacon egg cheese sandwich, tuna salad with egg cranberries and curry and raisins, so many possibilities!

    I make frittatas alllll the time. Eggs, milk, whatever additions your little heart desires and bake. Easy peasy. I like to add green onion, bell pepper and either sausage or bacon. Noms.

    My dinner last night was beetroot and egg curry, I absolutely adore this boiled eggs in a curry are so creamy I love it. I also have baked eggs a lot for snacks!

    When I'm emptying out my fridge prior to going to the Thursday Farmer's Market in LA [prefer the variety] - Frittatas and quiches are my go-tos. Tend to make butter pastry or coconut pastry depending on what I have in hand. Additionally, quiches feeze well.

    I like scrambies with turmeric root, baby Bellas and 1.5 cheese slices. Simple but good.

    i seriously dislike eggs, and my stomach dislikes them even more. but i do use them about once a week because they're an easy way to access protein.

    baked creme caramel, caramel glaze optional and i use plain milk instead of cream. it's two eggs to each cup of milk, vanilla flavouring and whatever level of sweetening works well for you. it's basically french toast without the 'toast' part. or rice pudding without the rice, i suppose. eugh, rice pudding.

    crepes. you can do anything with these although i usually default to the cinnamon or lemon and sugar sprinkling of my childhood. they're terrific with cheese and asparagus though. the proportions are: for every egg, half cup of milk and half cup of flour - the mixture should pour like thick cream. med-high heat and make sure the pan is well seasoned so you can turn them over. swirl the pan to spread the batter as thin as it's willing to go, and you're good.

    cheese and mushroom omelettes because did i mention how i dislike eggs? i saute a barrelful of thick-cut mushrooms with a little butter, then just pour the beaten egg/milk mixture over them. cheese on top and just leave it alone on LOW heat till it sets. the mushrooms are what make the egg part bearable, for me.

    It's hard to beat just a fried egg, sunny side up with a crispy bottom and a sprinkling of salt and pepper. Or a hard boiled egg mashed with butter.

    I do realise these aren't really recipes.

    I like making a "kugle" (savory loaf). It travels really well, making it perfect for lunches.

    One of my go-to recipes:

    Cooked brown rice
    Spinach, chopped
    Onions and mushrooms, diced and sautéed
    Eggs, beaten
    Salt and pepper
    Dill (optional)
    Sausage, diced (optional)

    Mix and bake in loaf pan over medium heat until set.

    ONLY if you're not opposed to spicy w. a subtle hit of heat then I'd recommend an alternative egg dish:
    • Commit to a tagine lentil recipe to your liking
    • Deep fry hard-boiled eggs which you may then add to the dense stew; Alternatively you may poach the eggs instead if you prefer it runny
    • If you can't make fresh piadina then you may buy small sized tortillas to fry up as a substitute for puri

    I like to drop a raw egg in a frosty mugg of cold beer and drink it alllll downnnnn. Ahhhhh!!!!! Heck, no one else above appears to be dieting !!:)

    Fried rice with egg on top - I usually "fry" in a non-stick pan, without without oil or butter.
    This is a great clean-out-the-fridge-dinner - I stirfry any random veggies, add any left over meat chopped up small (or cook a little bit of chorizo in with the veggies), add some cooked rice, spice it up a little with fennel seeds, chilli flakes and soy sauce. Then serve it with eggs on top.

    Omelettes are really quick and easy if you have a good pan - thought they were hard until I watched a couple of youtube videos - very easy.

    Toast with avocado and poached egg on top is a classic cafe breakfast around here.

    All the spice options like shakshuka and heuvos rancheros are delicious.

    Boiled eggs make a good snack, I must remember to boil some up to take to work this week.
