3500 calories in one pound of fat. However, you need to eat over not just your calorie goal, but the maintenance level of calories before you start gaining fat. This will all be confounded by water weight gain as well.5

You don't gain 3 lbs in a day nor do you lose 3 lbs in a day. When the scale shows you up 5 lbs don't freak. It'll level back off by next week at your next weigh in3

There is no limit to the calories that the body can absorb so you could gain 3lbs of fat in a day if you consumed 10.5k calories over maintenance. Although TEF and NEAT would make this unlikely.
But yes in this case, it is likely water weight.2
