Oh man, I feel like a genius. Both recipes are adapted from other recipes (the french toast is from healthytippingpoint.com and the cookie dough hummus is from chocolatecoveredkatie.com) Enjoy!!

French Toast
1 english muffin (I'm all out of bread but this worked perfect, I have Orowheat 100% whole wheat english muffins)
1/2 a banana (mine are slightly over ripe, but any would do)
1 tbsp peanut butter
1 tbsp soy milk
some cinnamon

Blend everything (except the bread, obviously ;) until smooth, pour into a bowl. Coat the english muffins with the yummy mixture (there will be a little left over, definitely eat it with a spoon) and put into a non stick pan that's been sprayed with non-stick spray (this stuff WILL stick if you don't use the spray and non-stick pan), heated at just below med-high. Cook until golden brown on both sides. It's perfect just like that, or you can create heaven by making....

Cookie Dough Hummus (it doesn't taste like beans, PROMISE! This makes 6 servings, eat it on apples and graham crakers!)

1/2 cup chick peas
2 tpsp vegan chocolate chips (I use enjoy life These are SO good when they're all melty in the french toast.)
1 TBSP peanut butter
2 packets stevia (you may not need both packets if your using flavored protein powder)
Cinnamon
3 tbsp Protein Powder (I use unflavored soy protein from the bulk section, but any will do)
1 tbsp cocoa powder (omit if using chocolate protein powder
about 2 tbsp-1/4 cup of soy milk

Blend/process it all (minus chocolate chips) up until it's completely smooth and then put it in a bowl, stir in the chocolate chips and eat it with a spoon! Or, you know.... do what your supposed to do and put one TBSP on a piece of your french toast, and then put the other piece on top and let it sit for a minute or two to get the hummus all warm and the chocolate chips melty and enjoy! I swear... it's just like I imagine heaven to be (;

AND it's only 277 calories! I'd say that's pretty darn good for something this yummy.
