Fish recipes

Does anyone have any good fish recipes? I usually just bake it and add some grilled onions and peppers but I would like to try a new recipe. Any ideas?

    I've only really baked salmon. I put a dash of salt, a teaspoon of lemon, black peppers, garlic powder, oregano, basil and olive oil. Turns out great all the time. :)

    i just can't when it's fish. but actually salmon cut into about 1-inch chunks is pretty good with a fettucini-alfredo type theme.

    Fish is a broad topic. There are so many types and ways to cook. Is there a particular fish you like best?

    For cod, halibut, or salmon - en papillote! You can do any fish this way, but I like a thicker fillet. There's also so many flavor combinations you can try.

    First, get some parchment paper - enough to wrap around each piece of fish in a loose packet. I tend to fold my parchment to look like an empenada or pierogi.

    Put a handful of spinach or arugula, a little fresh basil, and two or three slices of tomato in the parchment.
    Place fish filet on the bed of spinach. Season with salt and pepper and drizzle with a little olive oil or a pat of butter if you'd like. The oil or butter will mix with other juices and for a little sauce as it bakes.
    Lay a few thin slices of lemon over the fish.
    Bake at 375 for usually 12-15 minutes (a little more for a thick filet, a little less for thin)

    You can do this with many veggie and herb combinations, I just prefer my heartier veggies be shredded (like carrots) or thinly sliced (squash, zucchini, potato) so they're tender when the fish is. You can also use the same technique on the grill, but with foil instead of parchment.

    Skin-on fillets, scaled and pinboned, rub with oil and salt, heat a dry pan and fry skin side down until it's nearly done - you can see it turning opaque from the bottom up, like with a fried egg - when there's only a little bit of raw left on the top, flip it, cook briefly and serve skin side up. So crispy and juicy!

    Or you can oil and salt only the skin, spread a thin layer of tomato sauce in a dish and lay the fish in it, skin up, and bake in a hot oven for 20min. Sea bass is lovely cooked like this.

    This sounds weird but trust me. Rub some salmon down with Cajun seasoning and cook it in a skillet. A minute of two before you pull it out put a tablespoon or two of orange marmalade on it. It's great.

    Coconut poached Fish:

    400ml coconut cream ( I use light )
    Grated zest and juice of 1 lime
    1 tablespoon fish sauce
    1 tablespoon brown sugar
    2 teaspoon sambal oelek
    1 garlic clove, crushed
    4 x 120g firm white fish fillets
    1 cup baby spinach leaves

    Steamed rice, to serve
    Green onions, shredded, to serve
    Chilli, sliced (optional)

    Make sauce using all ingredients then add fish and poach for 10 mins
    Yummy!!

    Salmon filets: Brush with olive oil, season with lemon zest, salt, pepper, garlic & dried dill (or tarragon). Broil on upper rack of oven or grill. Easy, quick, healthy.

    Any white fish, put in baking dish, top with mushrooms, celery , green onions, I put them individually on a mini food processor first
    Top with some Monterey Jack cheese. Bake for about20minutes @425.

    I made this chili lime fish (I used tilapia) today and served it over some Trader Joe's riced cauliflower. It was delicious and so quick and easy to prepare. It's going into our regular rotation. Thanks for sharing!
