Rice would be good. Not sure if I have any. I am considering vegetarian sausage. I'm vegetarian but I can pretty much find a replacement for anything so it doesnt matter what you guys suggest. Ill go see if I have rice. Im not sure what I have in lentils either. I think the closest I have right now is beans. Lol.

I have no qualms about eating it on its own. Saag paneer is amazing!

Thanks everyone! I think I can find something :) It seems it would go good with some sort of carb (naan, rice, etc). I bought it prepackaged and was surprised at how good it was earlier so I decided to have it again for dinner.

I have just discovered cauliflower rice, very easy to make and goes brilliantly with curries :)

I'm a huge fan of Indian food and sometimes I serve it over boiled potatoes instead of rice. In fact, some curry dishes are really good over sweet potatoes--not a "healthy substitute" compromise at all.

I would say Naan but that's because everything is good with Naan (curse you gluten sensitivity!)

MMM spinach and paneer. I am sure you've eaten it by now, but basmati rice or leftover naan is best of course, tortillas will do in a pinch.

Yum yum! Thank you for all of the ideas! I have some punjab eggplant and also "Bombay potatoes". I bought these prepackaged but the ingredients are so recognizable and the taste is great!! Im thinking the eggplant with some potatoes or noodles tomorrow. Seems like it might be an interesting combination.

    Definitely naan.
Wow, I am seriously craving Indian food now. I have dabbled a bit with cooking it. This dish is fairly easy to make. The first time I made the paneer, it felt like magic. So easy and so delicious. I highly recommend trying it out. This is my go-to recipe for saag paneer (scroll down a bit for directions for making the paneer -- make it first!).

You can easily make gluten free naan at home with just few ingredients :)

True, but I have to stay away from most foods that would make it decent for the time being. I guess I should actually say "curse you, bad guts!" Which I tend to do on a daily basis anyway :P

There are a few companies that make Indian food in sealed pouches you can microwave or heat up on the stovetop. Check your local grocery store or Indian market if you have one. I can get the kitchen of India and MTR brands for less than the price through Amazon.

If you want to make Indian from scratch then check out YouTube for several terrific Indian home cooks who have posted how-to cooking videos. Also, these are highly recommended Indian cookbooks. The first is vegan while the second includes meat dishes.

Here's a store locator for the Kitchens of India products:

You'll want to put in your zip and check any/all of the "complete meals" options.

Otherwise, below is a decent price at 3 dollars a pouch through Amazon. One pouch is easily enough for two meals. I've been known to eat the whole thing!

You can save tonnes of calories here, and get more protein, if you swam the paneer for firm tofu. Trust me. Just as good, just better for you :)

Blech. I like tofu fine but absolutely NOT in the sag paneer, which usually has plenty of butter and cream in it anyway, it's not like it's vegan or low calorie. I'd make paneer from skim milk to reduce calories before subbing tofu, I find it really disconcerting in the creamed spinach. Whole Foods does this (indian creamed spinach with tofu, not paneer) and it wrecks it completely IMO.

    Tread carefully with this.

I used tofu once before I learned how to make paneer. OK in a pinch, but at this point, I'd rather just not make saag paneer if I can't have the paneer.
