Anyone have any good and easy vegetarian recipes to share? I just discovered Gardein soy products and use them daily in my meals. Would like to make some desserts or something new for breakfast (DO NOT LIKE TOFU)

Not if OP is consuming eggs and honey -- it's unclear from the post whether OP is vegan or not since she excluded some animal foods and didn't mention others.

Check out Chocolate Covered Katie for desserts (http://chocolatecoveredkatie.com). Many desserts can be made dairy-free by swapping out the milk for your preferred non-dairy milk. I typically use unsweetened soy milk, but depending on what you're making, coconut or almond might work better. Most non-dairy milks do have their own distinctive flavor, so I would recommend trying a few to see what you like and what would complement your recipes.
I'm a big tempeh bacon fan. You can buy it prepackaged (http://lightlife.com/products/organic-fakin-bacon-tempeh-strips) or you can make your own (http://www.veganpeace.com/recipe_pages/recipes/TempehBacon.htm). It can easily be baked if you'd prefer to use less oil in your cooking.1 -

Here's a vegan and gluten free dessert. It's a chickpea cookie dough banana ice cream. You need to make the cookie dough a day ahead and chop bananas for the freezer the day before too. It's really easy to make and cheap too.

Did you even read what I wrote? We don't have enough information to conclude that OP is vegan, as she doesn't mention if eggs and honey are okay. You can't just "whatever" animal products into some new definition of veganism.3
