    I was going to say any soup I don't have to make, but that's an outright lie! I love any soup I make...as long as I MAKE IT..can't stand the canned stuff anymore.

    In the crockpot tonite is chicken with potatoes, carrots, onions, peas, kale and a bit of spinach. House smells INCREDIBLE!

    I've recently started making Harira, which is a Moroccan soup with lentils and chickpeas. It's fresh and mildly spiced and tastes super-healthy to me. If I believed in detoxes, this would be my detox soup :) It's not that hard to make, but does take time. I make a big batch and freeze it in individual containers. I love it!
    I also don't like canned soup.

    My favourites are: French onion, mushroom, carrot, pumpkin, curried cauliflower, cream of chicken, cream of asparagus, chicken soup with knegle, paprikas, goulas, lentil soup, bean soup, miso, ramen, Croatian flour soup, just to name a few.

    I just made soup in my IP tonight! One chicken breast (9oz) and some rustic (lazy) chopped onion (5oz), celery (8 oz), carrot (7oz), garlic (3 cloves), can of Campbell's chicken broth, some water, rosemary (tbsp), sage (tsp), thyme (tsp). Makes about 4 cups and recipe builder says 129 a cup. Can't go wrong!

    My go to is a free form kind of thing. 2 cups of vegetable broth, 2 cups of water, add a can of beans, rinsed and drained, any type. I love tomatoes so usually in goes a can of diced tomatoes. Then whatever vegetables you want or have laying around till the soup looks as thick as you like it. Add salt, pepper, other spices, bayleaf is good, my family likes allspice in theirs. The fun is in the fact that it never comes out exactly the same. It's good in the crock pot and feeds my family of six and leaves leftovers.

    Butternut squash soup (made with onion, ginger, curry powder, a chopped up apple & a bit of molasses).
    Black bean soup (onion, jalapeno, cumin, a can of spanish style tomato sauce and a packet of Sazon seasoning)
    Red lentil soup (onion, ginger, garlic, sweet potato, red curry paste and coconut milk)

    The taco soup recipe sounds amazing! As soon as I can find my crockpot I'm going to make it (it's somewhere in a moving box right now lol).
    It is pretty high in sodium for anyone who is watching that. I serve it with Fritos scoops and a nice winter ale usually... ;)

    I need that taco stew. I can make it veggie with Beyond Meat beefy crumbles, I think that would work just fine. I think I could make it on the stovetop too. I don't have a slow cooker.

    This is my favorite

    Ingredients:
    1 Tbsp olive oil
    2 lbs boneless chicken breasts (I used three)
    1 ½ cups chopped red onion
    1 ¼ cups chopped red bell pepper
    ¾ cup chicken broth
    ¼ cup chopped cilantro
    1 Tbsp Cumin
    2 Tbsp chopped chipotle chile in adobo (I add more)
    6 cloves of garlic, roughly chopped
    2 (28oz) fire roasted tomatoes
    1 (4 oz) chopped green chiles, undrained
    Salt and pepper

    Instructions
    Add everything except the cilantro in the crockpot and stir it up
    Cook on low for 6-7 hours
    Shred chicken

    *All of that makes the crockpot really full. After I shredded the chicken I added a lot more broth. I also added a bunch of zucchini, green beans and cauliflower and put in on high for an hour if fresh, 5 minutes if frozen. Add the cilantro.

    Really!? No slow cooker? I have four, and have been eyeing an Instapot... I'll send you one of mine. :)

    It's really yummy, kind of like a mexican chili. Plus I think the fritos scoops are GF, right?

    So this reminds me, I was going to post my recipe for what I call "Day Two Tortilla Soup" earlier and I forgot.

    I make a version of this:

    Only I increase the size of it (usually 2-3 lbs of chicken breast). I cook it one day and shred the chicken and use it for rice bowls or enchilada filling or something like that as the original recipe calls for.

    Then, after we've used what we are going to use for the first evening meal, there is usually a ton of chicken leftover. So without even taking it out of the crockpot - I dump in a quart of chicken broth, a little more of all of the seasoning, a can of tomato sauce, and I cube about half a block of velveeta (optional if you are anti-velveeta). Then I stick the whole crock back in the fridge. The next morning, I put the insert back in the cooker and cook it on low the whole day and voila - tortilla soup (well once I add the tortilla strips to serve it with but you can also cut up corn tortillas and cook them in it all day). So I've had two days of meals and haven't even cleaned the crockpot yet...

    It's cold right now, and I want nothing more than a warming lentil soup (with potatoes and carrots blended in to add more heartiness). Might make it today. Ask me again later and my answer may be different. I absolutely love all kinds of soup. Mushroom is a staple, and sorrel soup is how I imagine summer tastes like. Barley soup holds its own as a main dish. Dandelion soup is interesting to say the least. Cold soups are on the list too (google Okroshka). Have I mentioned I love soup?
