I was searching for an easy way to cook eggplant the other day and found this method for roasted eggplant that I made a little bit more healthy ...
Cut eggplant in half lengthwise
Salt Eggplant
Let sit for 30 minutes
Squeeze water out of eggplant and rinse off salt
Spray a tiny bit of low calorie cooking spray on each half & sprinkle with thyme
Roast face down at 400 on a cookie sheet (I like to use tin foil so it doesn't stick!)
When it comes out it is caramelized and delicious!

I just wanted to ask - when you squeeze out the water do you mean actually grab and squeeze like a dishrag?
Just don't want to ruin it by being overzealous with my aqueeze LOL

Just squeeze it a lightly. Salting it first helps get rid of the bitter taste that eggplant can have.0
