I've got a few favorites:
Spilling The Beans by Julie Van Rosendaal and Sue Duncan. As the name says, beans are in every recipe. I've found the recipes easy to follow, use everyday ingredients and tasty.
The Good Friends Cookbook by Key Porter Books. From appetizers to desserts. Tasty and use everyday ingredients. Sadly, it's out of print but some used copies are around.
Chinese Recipes by Stephen Yan - easy to follow recipes with very good results. Sweet & Sour pork recipe tastes just like take out. Sadly, again out of print (my copy is from 1978 and looks tatty). There are a few out there with the same name so here's the ISBN: B002C1E8XA.
