The taco soup recipe sounds amazing! As soon as I can find my crockpot I'm going to make it (it's somewhere in a moving box right now lol).0 -

I need that taco stew. I can make it veggie with Beyond Meat beefy crumbles, I think that would work just fine. I think I could make it on the stovetop too. I don't have a slow cooker.0 -
This is my favorite
Ingredients:
1 Tbsp olive oil
2 lbs boneless chicken breasts (I used three)
1 ½ cups chopped red onion
1 ¼ cups chopped red bell pepper
¾ cup chicken broth
¼ cup chopped cilantro
1 Tbsp Cumin
2 Tbsp chopped chipotle chile in adobo (I add more)
6 cloves of garlic, roughly chopped
2 (28oz) fire roasted tomatoes
1 (4 oz) chopped green chiles, undrained
Salt and pepper
Instructions
Add everything except the cilantro in the crockpot and stir it up
Cook on low for 6-7 hours
Shred chicken
*All of that makes the crockpot really full. After I shredded the chicken I added a lot more broth. I also added a bunch of zucchini, green beans and cauliflower and put in on high for an hour if fresh, 5 minutes if frozen. Add the cilantro.

Really!? No slow cooker? I have four, and have been eyeing an Instapot... I'll send you one of mine.
It's really yummy, kind of like a mexican chili. Plus I think the fritos scoops are GF, right?0 -

So this reminds me, I was going to post my recipe for what I call "Day Two Tortilla Soup" earlier and I forgot.
I make a version of this:
http://www.skinnytaste.com/crock-pot-santa-fe-chicken-425-pts/
Only I increase the size of it (usually 2-3 lbs of chicken breast). I cook it one day and shred the chicken and use it for rice bowls or enchilada filling or something like that as the original recipe calls for.
Then, after we've used what we are going to use for the first evening meal, there is usually a ton of chicken leftover. So without even taking it out of the crockpot - I dump in a quart of chicken broth, a little more of all of the seasoning, a can of tomato sauce, and I cube about half a block of velveeta (optional if you are anti-velveeta). Then I stick the whole crock back in the fridge. The next morning, I put the insert back in the cooker and cook it on low the whole day and voila - tortilla soup (well once I add the tortilla strips to serve it with but you can also cut up corn tortillas and cook them in it all day). So I've had two days of meals and haven't even cleaned the crockpot yet...

In my slow-cooker right now... organic veg: parsnips -potato- an eating apple - onion - clove garlic - curry powder (cumin/coriandar/turmeric/chilli) - tablespoon sultanas -walnut oil- veg stock. For lunch today, leeks- potato- veg stock-butter0

It's cold right now, and I want nothing more than a warming lentil soup (with potatoes and carrots blended in to add more heartiness). Might make it today. Ask me again later and my answer may be different. I absolutely love all kinds of soup. Mushroom is a staple, and sorrel soup is how I imagine summer tastes like. Barley soup holds its own as a main dish. Dandelion soup is interesting to say the least. Cold soups are on the list too (google Okroshka). Have I mentioned I love soup?0

I would eat it with corn tortillas I think. I'd want something soft to dip and dunk.
I have an aversion to Fritos. Long story. Made myself sick on them one time when I was a kid0 -

I love stuffed pepper soup!!
http://www.skinnytaste.com/stuffed-pepper-soup/
I follow this recipe except I sub ground turkey for ground beef, sometimes I also use veggie broth instead of chicken and omit the turkey for a meatless option. I'll also add some chopped up jalapeños and red pepper flakes if I want it to have a little heat. Cooking the meat in Sriracha also adds a little flair!1 -
Oh another one I like to do is also a broth chicken soup but with garlic, onion, chopped fresh tomato, pasta stars and lime, put a bunch of spinach in the bottom of the bowl as you serve.1

I've made this soup and it's pretty good. For a meatless option you could do brown lentils and finely diced wild mushrooms. That's what I did because I don't like meat and it's amazing. All the "meatiness" from lentils and all the umami from mushrooms.1 -
Won Ton or Matzo Ball soup..

Born and raised in Louisiana, this was and still is my favorite. I like it with Red fish, but catfish is easier to come by.
