Any favorite fudge recipes? I love to make it and love trying new recipes around the holiday season :-)

    This is the fudge recipe I used. It's done on the stove top and is quick to make. Downside is you have to keep it refrigerated or you end up eating it with a spoon.

    2 c (363 g) sugar
    2/3 c (160 mL) evaporated milk
    1 1/4 c (47 g) mini marshmallows
    1 c (111 g) margarine
    1 c (162 g) chocolate chips (any flavor, I've made with semi-sweet and lemon)
    1 tsp vanilla extract

    In a large saucepan over medium heat, stir together sugar, milk, marshmallows, and margarine. Simmer for 5 minutes. Add chips and vanilla; stir until melted. Pour mixture into a well greased 9x13 inch pan, and let cool until hard (refrigerating works best).

    I cut into 32 bars. They aren't thick, but they are wide. I haven't tried it, but I think using an 8x8 or 9x9 square dish will make thicker pieces.

    I make kind of a fake fudge but people seem to like it and ask for more every year --- It's just 18 oz choc. chips, a can of sweetened condensed milk, 2 cups of mini marshmallows and a pinch of salt, melted in a saucepan over low heat, then you take it off the heat, stir in 1.5 teaspoons of vanilla, pour it into a 9X9 pan lined with parchment paper (with an overhang, so you can lift it out when it hardens and peel off the paper to cut it) and cool it in the fridge.
