I am really interested in some quick recipes for one (or more if the leftovers are good) I eat seafood but no other meats. I will eat all whole grain but only organic. Same goes for dairy. I will try unusual recipes with out a second thought so dazzle me :)

    Search "Hungry Girl" on the net. I just got one of her cook books. All of the recipes could be tweaked to be made with organic ingredients. The book I got has 300 recipes under 300 calories. She has some yummy recipes.

    It can be hard cooking for only one. I typically will ask at the meat counter that they package my meat in individual serving sizes to that I can defrost only what I can eat in one meal. That being said an easy recipe that I do with seafood and whole wheat pasta...

    Shrimp (the size is up to you. I find about a 1/3 of a pound of 30-45 count is plenty)
    Minced garlic
    Red Onion
    Mushrooms
    Whole Wheat Angel hair pasta

    Sautee the garlic, red onions and mushrooms. Cook the shrimp (from frozen or raw). Combine and put on a bed of whole wheat pasta.

    I typically add some sauce (three cheese alfredo, sun-dried tomato, etc.) for a little creaminess, but it wouldn't be completely necessary.

    I make pasta bakes (with very little pasta now, I might add!) with heaps of veggies that once cooked I seperate out into take-away containers and freeze. I cook most of my meals like this because I was bought up in a family of six and tend to cook for six each time as I don't know how to reduce the recipes down.... I cook mostly on a Sunday and box everything up for the week. I take a meal for lunch and a meal for dinner each day. If I cook 4-5 different things on a Sunday that can last me a week or longer and I don't get bored with just eating the same thing each night. I had to buy another freezer though, because the little one in my fridge doesn't really cut it!!
