Happy New Year!
Looking for some easy and delicious lunch and dinner ideas and recipes. My calories per day are 1200, so looking for 300-400 cals for lunch and dinner. Need to be better prepared if I am going to do this.

I like pintrest recipe one pot chicken burrito bowl. I portion out and serve with shredded lettuce and diced tomatoes. Also one pan sour cream chicken enchilada skillet is yummy served with side salad. Later this week I plan on trying the one pan chicken florentine spaghetti.

Something I make often is Chickpeas. Great protein and fiber without cholesterol. I buy them canned, drain & rinse, put in a bowl and smash them. Then I add a very light touch of veganaise (or mayo) a tblsp of spicy mustard, chopped celery, onions, water chesnuts, and dill pickle. It's a mock chicken salad. I roll it in a Joseph's Flax Lavash Bread (60 cals) with lettuce, tomato and sprouts. Very few calorie and so good. You could also mash the chickpeas with avacado and skip the mayo/mustard. Add cilantro, garlic, etc.6

We do veggie tacos a lot in our house with either hard shell tacos or the low calorie wheat tortillas.
Beer battered fish filet ( I buy the frozen ones) with veggies on the side
For lunches, I usually stick with a frozen meal like lean cuisine, they have several varieties so I don't get too tired of them. Or a low calorie cereal with unsweet almond milk.

I eat the same foods I always did just in appropriate portion sizes for my goal.
Eat smaller portion and add more low calorie vegetables to your meals.
My calorie goal is 1200 without exercise. I eat a smaller breakfast and have more calories for later in the day.
Breakfast- Greek yogurt, granola bars, cereal with milk, sandwich, dinner leftovers, fruit, cottage cheese (about 200-300 calories)
Lunch- sandwich, salad, or dinner leftovers (about 300-500 calories)
Dinner- something different every night of the month. (about 500-600 calories) I have soup once a week usually.
Snacks- things like fruit, chips, popcorn, pretzels, chocolate, cookies, granola bar, carrots, celery, broccoli, trail mix, deviled eggs, pickles, cottage cheese (about 100-300 calories)
