Hi my names vicki and I haven't been on mfp for 4years, I'm newly diagnosed coeliac and have been piling on the pounds so now it's time to get on track and lose the weight. Looking for fellow coeliacs to help with meal ideas and general support.x tia.xx

    Arepas are sort of like a corn-based english muffin (and very easy to make) - I eat them a lot with egg salad/tuna salad/jam/hard boiled egg/sausage-egg on them. (You just add water to masarepa and a little salt, form into patties and heat on skillet). I make them a bit thinner and smaller than they typically do in Colombia so they work out to about 100 calories each. Masarepa can be found in the latin foods aisle (usual name brands are PAN or Goya).

    I do a lot of stir fry rice as well, but with a lot of vegetables. And a lot of yogurt.

    I will be trying arepas , thanks for sharing. I am five years post diagnosis with celiac and have lost from 225 to 165 as of this morning. My diary is open feel free to look.
