My favourite recipe is my Grammy's recipe for pasta sauce. I've only changed it slightly. The best part about it is it's easy to change to your tastes, too.
In a large pot, combine:
1 can diced tomatoes
1 can tomato paste
1 can mushroom pieces OR 3 fresh mushrooms, sliced
1.5 tsp garlic powder
1.5 tsp oregano
1 tsp red pepper flakes
1/8 tsp cloves
(my Grammy used bay leaves as well, but you have to pick them out before serving and with all of the veggies they can be very hard to find)
Now add in whatever veggies you like, diced: I use green/red/yellow/orange peppers, asparagus, carrots, beans, broccoli, pretty much whatever's on sale. Put them in raw as they'll cook in the sauce.
Cook on the side whatever meat you like best. I sometimes cook chicken breasts in chunks, but I usually use extra lean ground beef. Once cooked, add it to the sauce.
Boil the sauce, on low heat, at least until the veggies are cooked. It's best if you can leave it for a few hours (I usually go 3-6 hours on the stove) so that the flavours really get to mix together. Don't forget to stir the pot!
I don't even make pasta with this anymore (as I'm trying to cut back on the carbs) and just eat it like a bowl of chili (because I don't like all the beans that are in chili).0 -
So this week has been awful for diet and exercise! I currently have my monthly visitor and a minor back I jury! Still no excuse for not eating right!

I have been going through some "stuff" in life, issues with kids, a new relationship and various business trips I have been on and re-oragnizing my life, my best friend deleted me from her page, I dont blame her, I have lost focus and she has tried to help and encourage me for a very very long time. I've been away, but still trying to make the scale go down (albeit slowly ). This week I weighed in at 181.2 pounds0

This is one of my favorites! It can be served for breakfast, lunch or dinner and can be adjusted to your liking. I make it even lower in calories and fat by omitting the oil (I use a spray of PAM) and I use reduced fat feta, and monterey cheese with a about a 1/4 cup of parmasean. I only put about a half of the cheese that the recipe calls for and it still comes out yummy! Enjoy!
Crustless Spinach Quiche
6 Servings Prep: 25 min. Bake: 40 min.
Ingredients
1 cup chopped onion
1 cup sliced fresh mushrooms
1 tablespoon vegetable oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1/3 cup finely chopped fully cooked ham
3 eggs
3 egg whites
3 cups (12 ounces) shredded Muenster or Monterey Jack cheese
2 cloves of garlic
1/8 teaspoon pepper
Directions
In a large skillet, saute onion, garlic and mushrooms in oil until tender. Add spinach and ham. cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350° for 40-45 minutes or until a knife inserted near the center comes out clean.
Nutrition Facts: 1 serving (1 piece) equals 255 calories, 19 g fat (10 g saturated fat), 180 mg cholesterol, 482 mg sodium, 5 g carbohydrate, 2 g fiber, 17 g protein.0 -

Sorry I couldn't weigh in last week. BAD week! :grumble: I didn't have my laptop and my scale broke. :sad: Last time I weighed myself was on Tuesday 7/5. I weighed in at 150.4 and was only 1.6 away from my mini goal weight but I don't know if I met it. I don't feel like I have gained but not sure if I lost either. I excersized and ate decent. We will see!
I received my lap top yesterday and set it up today but I'm on my way out to get a new scale so will be able to weigh in next week.:happy:
The way I'm feeling now is a mixture of things....I feel like I can conquer this beast but I'm tired! I will pick up tomorrow or I have work to do either home stuff or things I brought home from work. My plate keeps getting full but I don't have a big enough plate!!! Time to get back on track and refocus on me!
As for a good recipe - I will have to get back to yall.
