I am looking for some simple meal ideas ('cause I am not a great cook) that is more ideal for helping maintain or lose weight as a runner.

Combine any starch with a protein and a vegetable of your choice. Fruit is optional. Cut, mix and heat as needed. Eat at a calorie deficit to lose weight. Eat at (eh) maintenance to maintain weight. Few things get more simple.0

slow cooker ($15) and google some recipes. put food in the morning, ready for dinner. great leftovers.0

Polenta is pretty good. Comes in a tube like this: http://www.keviniscooking.com/wp-content/uploads/2013/06/3518-polentatraditional_548_general.jpg
You can slice it up and bake it. Then pile on whatever you like (ratatouille, meat sauce, cheese, chicken, etc).
