Meatloaf Recipes

Today's family supper is supposed to be meatloaf and mashed potatoes. Any good recipes to keep MY serving under 600 cals? I'm the only one dieting but don't want to make something separate just for me.

    @ann_huss I love this recipe, and typically make it in meatloaf muffins so I can flash freeze them. Basic Meatloaf. I use ground turkey because it's cheaper and I usually have it on hand. Sometimes I include finely chopped spinach with or instead of celery.

    Oh, and for mashed potatoes, I usually make them with skim milk because I have it on hand. I also use butter and a small amount of light sour cream for flavor. Broth also works.

    It's delicious, a 250-300ish calorie serving is plenty for me, and even my friends' picky kid gobbled it up!

    For mashed potatoes I just use low fat milk and a small amount of butter (a tablespoon maybe?).

    Just find a regular recipe you like, then put everything into the MFP recipe log and figure out how much you can have to stay in your calorie goal. You could make some deplorable low-fat, faux-turkey, soy meatloaf that has a lot fewer calories, but whats the point when it tastes like warm garbage?

    Well yeah, anything can be less than 600 calories a serving if you cut it small enough.

    For the BBQ sauce I have used Sweet Baby Rays or G Hughes SF BBQ sauce.

    I sauted small diced onions, apples, peppers, mushrooms breadcrumbs and eggs. Add to ground Turkey, top with Ketchup and Worcestershire sauce.

    I'd say to swap up the meats. Either do fully ground turkey or do half ground turkey and half ground beef. You can also add shredded veggies into your meatloaf to help with bulk while lowering calories. Onions, shredded carrots, and shredded zucchini are easy to include in meatloafs.
