Today I think I want to make a huge salad I'm kinda craving it. Most non-vegans think all we eat is salad but to be quite honest I barely ever eat salads in fact I haven't even had a salad yet this year.

Not crazy about salad either. I call it rabbit food. I will eat salads on occasion but I prefer all veg soups over salads. I really enjoy snacking on Mary's Gone Crackers and today was no exception. Super Seed is my fav.

Wholesome Pantry Chipotle and Bean Veggie burger with a slice of tofutti cheese on a multigrain thin sandwich bread for lunch. I love when I can find frozen veggie burgers that don't contain egg. And these weren't ultra expensive either.

I finally made my salad! I'ts a garden salad and has potatoes in it. I don't use or make salad dressing. It's not as bland as it looks the potatoes were boiled in rosemary herb. upgcm4pn3wfj.jpg

Salad= Organic Spring mix, Roma tomato, jalapeño pepper, spring onion, cucumber and russet potato.

I'm trying the veganuary challenge too and loving it. Not sure if I'll stay totally vegan but will definitely cut out a lot of the meat / dairy in favour of animal free options. Loving quorn vegan spicy burgers; delish in a wholemeal bun with salad and onion and chilli marmalade.
