I recently did a Costco trip, meaning I bought a HUGE pack of boneless, skinless chicken breasts so I'm looking for some new and different recipes :-)

    This is my lunch prep and I really love it!! You can really use any veg just be mindful of cooking time. I put my brocolli in later than the others.

    Recipe for two "lemon chicken with salsa and sweetcorn potato's

    Sweetcorn potato
    400g new potatos
    100g sweetcorn
    1 tbls olive oil

    Chicken breast
    Juice of whole lemon + zest
    Thyme

    Salsa:
    4 large tomatos
    Chilli *to taste*
    1 red onion
    1 tbls red wine vinigar
    Bunch corriander

    Method:

    Boil potatos then add sweetcorn and 1 tablespoon of olive oil.

    Flatten chicken breast then marinade chicken breast in lemon juice and zest and fresh thyme - oven cook or grill.

    Chop up all salsa ingredients!

    Serve

    The last time I made it I "cheated" some. (Mostly because of what was hanging around in the fridge) Browned the chicken, threw in 2 tbsp jarred pesto, 2 tbsp sun dried tomatoes, 1 cup white wine and 2 cans of the fire roasted tomatoes. I skipped the beans and served it over pasta. Hubby told me grated parmesan cheese made it even better.

    This one is not so much a recipe but a list of ingredients: Brown chicken breast in skillet (I season mine with salt, pepper, oregano and garlic powder); remove chicken and saute sliced bell pepper and onions. When the pepper and onions are soft but not quite done add some olives (I use pitted Kalamata but you can use black or green olives here) and cherry tomatoes. Continue to cook until tomatoes are softened. Top sliced chicken breasts with bell pepper mixture and sprinkle a tablespoon or two of feta cheese on top. I serve it with brown rice.

    This one is easy to tweak to fit your calorie/macro needs.

    I like to stuff my chicken breast with a bit of spinach, tomatoes, feta, and garlic. So easy and so delicious!

    I made these chicken burrito bowls last week and they were delish. I cut back on the cheese and swapped out plain Greek yogurt instead of sour cream. I chopped up avocado, red onion, and black olives and sprinkled on top of the bowls
    You could also use instant brown rice instead of white. If you don't want the carbs you could leave out the rice but the chicken broth absorbs the rice at the end so I would reduce chicken broth. I also use low-sodium broth.
