Hi! A great way to save up on carbohydrates (although they shouldn't necessarily be skipped during breakfast, they help with brain function and are great to kick start your mind and body in the morning) is to make protein waffles. An egg or 3 egg whites (to cut back on fat), with a serving of protein, and a half serving of whole grain/no sugar added pancake/waffle mix is great! Omit waffle mix completely if you already have a source of carbs with your meal. Protein recipes tend to come out dry so do not cook for as long as you would a typical waffle or pancake.

You can also make egg white "muffins" in a cupcake pan. Spray a pan with coconut oil or some type of nonstick spray. Pour one cup egg whites evenly among 5 cupcake slots, and add veggies (I love cherry tomatoes and spinach, with some sea salt!) Cook in oven at 350 for about 15 minutes. These are great to make ahead and reheat in the microwave too.

I love cottage cheese with my eggs. I do Greek yogurt, turkey bacon or sausage sometimes too

Eggs and meat (including seafood) are the easiest ways to increase protein without increasing carbs. Or a protein shake, I guess. Are those not good choices for you? (i.e., vegetarian or vegan)?
