So my sister is coming over for dinner on Wednesday and she recently decided to become a vegetarian. Can anyone help me with ideas to cook for her? What's your favourite veggie recipe?
I don't have many ideas as I have never had to cook this way before!

You can just cook a standard meat, veg, and starch meal, plus a salad. Then she can skip the meat. Or, if she likes pasta, just pick a recipe without meat. Tacos are another good option. Put out all the fixings (including beans) and let her assemble her own. Don't make it more complicated than it needs to be.1

The internet has 1000s of non-meat dishes that aren't necessarily 'vegan'.
Instead of trying to create a 'meat-less' version of something, just think in terms of dishes you already eat that don't use meat...vegetable frittata; spaghetti with marinara, or puttanesca, or primavera; if she eats fish, a nice seafood gumbo or paella...what about dairy? You could do a nice falafel with tzatziki sauce and a big salad.
What is your heritage? What would your great-grandmother have served when there was no meat?

A nice frittata, or a savoury bread pudding is nice and filling even if you don't add meat to it.
Lentil salads or stews.
Macaroni and cheese with some added veggies to make it healthy.
Lentil meatloaf.
Spaghetti with beans instead of ground meat.
An omelette.

If not vegan and will eat cheese, then a simple go to for me is a nice risotto. Some favourites:
Roasted butternut squash
Mushroom, pistachio and arugula
Milanese
Roasted veggies

My favorite veggie receipe is lentils with butternut squash and a side dish of steamed leafy greens like kale or collards. Lots of protein from the lentils. Just cook until soft. I like to shake McCormick's Perfect Pinch garlic, red pepper, and red bell pepper on my food, or tamari soy sauce.
I also like big salads with spinach, red lettuce, shredded cabbage, quinoa, black olives, almonds, celery, etc.0 -

Pinterest....type in "vegetarian main course"...you'll get tons. Many of my vegetarian meals involve lentils or legumes as the "meat"0

There are plenty of "normal" entrees that are meat-free!
Also, if you're feeling exotic, try recipes from cultures that do not rely so heavily on meat... such as Indian, Chinese, Thai, Japanese, and so on. A culture that is used to having a lot of everyday vegetarian options tend to do a better job of making these foods taste good.1 -
You could make channa masala, mixed veggies with rice, vegetarian sandwiches, etc. I really like the baked potato bar that kenyon mentioned-- have a bunch of ingredients like baked beans in sauce, finely chopped veggies, sour cream, salsa, and spices.0

I would suggest grilled cheese sandwichs. I just got done eating one and it was great.2

A nice pasta dish would be nice if you want to cook or if you don't...amy's makes a great vegetarian chili they actually have 4 flavors and it's in a can at walmart even. Pair it with some corn bread...if she eats dairy she can add cheese and sour cream.0

Pasta is the easiest, no panic meal to prepare for a vegetarian, add veggies to the sauce: mushroom, zucchini, spinach, just about any vegetable. This weekend I am making minestrone soup, I use vegetable stock as the base, and put in a can of beans, spinach, and whatever veggies I have left in my frig. Yummm!0

Hands down, best recipe for my vegetarian friends is bean enchiladas! It's sooo easy, delicious and filling! Use refried beans that are vegetarian and fat free. Don't forget to serve with sour cream mmmmmmmmm0
